Leprechaun Smoothie

Let’s be honest, smoothies are delicious! They are easy to make, and so easy to cram in loads of fruits and vegetables in one single cup – making them a healthy choice too.

My sister and I are both big fan of smoothies. She particularly enjoys them for breakfast, but we’ve both been known to indulge in the occasional lunchtime smoothie. She recently shared a healthy and unusual smoothie recipe with me and now I’m passing it along to you (thanks Amanda!).

This is a green smoothie – wait, don’t turn away yet – keep reading! I promise it will be delicious!

My sister dubbed this smoothie the Leprechaun Smoothie because it’s green (obviously). But also because the pineapple and kiwi are a nice, sweet surprise – like the pot of gold at the end of the rainbow. It doesn’t have to be St. Patrick’s Day to enjoy this sweet treat though – try it anytime.

Delicious, refreshing, and oh so smooth!

Ingredients
  • 1 banana broken into bite-sized pieces
  • 1/2 cup fresh spinach
  • 1 cup coconut milk
  • 1 kiwi, peel removed
  • 3-4 mint leaves
  • Ice cubes
Directions
  • Step 1 Add all ingredients to a blender.
  • Step 2 Blend until smooth.
  • Step 3 Pour in large glass and top with extra pineapple and mint leaves.
